Sumear is an experienced, ex-dairy cheese maker who specialises in a variety of uniquely cultured, hard, and crumbly cheeses. Using traditional methods, his own unique, plant-based bacterial cultures, and a perfect cave environment to age his authentic cheeses, Sumear's cheeses are the real deal and loved by the cheese purists out there.
No shortcuts were taken here. This cheese is traditionally outdoor cold-smoked for a minimum of 10 hours using real Maple Wood.
The texture is a cross between a Cheddar and Wensleydale cheese, but the flavour is that of a deep, strong, and authentically smoked Gouda or Scamorza. It can be sliced, grated or melted into a cheese sauce on the hob.
